I would like to fit a disc brake to a Shimano HF08 tandem rear hub. Do I need an adapter to screw onto the threads? Any recommendation for Disc brakes for dropped bars and do I need cable a operated brake?

Yes, you need an adaptor but they are available from tandem specialists. A cable disc is probably the easiest.
I can't recall what gear changers you are using - Campag Ergo, Shimano STI, bar ends or down tube levers. How many cogs, indexed or not?

From memory, the majority of 10sp road STI levers require road-pull disc brakes. The most recent road STI levers work well with MTB-pull brakes.

There are differences of opinion regarding BB7 tandem suitability, depending on whether you are coming off Mt Ventoux or not.

Was thinking of a Bengal cable operated rear disc brake to fit on the Dolan. I am not likely to be coming off Ventoux at any speed unless I can get Liz back on her bike after her hip was broken for her some ten years ago. Although a slight gleam of hope yesterday when I asked her what she would really like she replied to go touring on the back of the tandem. If they were the case I would invest in a real tourer. She did get out on her bike for the first time in 18 months yesterday and manage a total of 25k and had me peching on some of the hills so great progress.

Use the largest disc that will fit in the frame and you'll be good to go.
