Butternut squash and bean spicy couscous.

Recipe please!!!

(that sounds fantastic...)
It was rather yummy. Let me see if I can remember how I made it...

Roast 2-3cm chunks of butternut squash sprinkled with a good dash of curry powder and paprika in about a tablespoon of olive oil for about 30 minutes until soft and slightly caramelised. I had the oven at 180. Add some thinly-sliced onions and garlic about ten minutes before the squash is ready.
Cover 250g couscous with 300ml Marigold vegetable bouillon and allow to soak for about 4-5 minutes. Fluff up with a fork. Mix into the couscous a tin of drained red kidney beans to warm through. Add a handful of raisins if you like.
Take the roasted squash out of the oven and add the couscous mixture into the hot pan. Mix everything together. Stick the roasting tin back in the oven for about 5 minutes if, like me, you like some of your couscous to be crunchy. Finish with chopped fresh herbs such as coriander or parsley.

Spanish omelette/ frittata -- eggs and potatoes and onions and whatever other veg is around. It's my standby meal when I have to cook for myself!

It was seafood risotto tonight. There's half a tin of clams left over in the fridge, so I guess it's spaghetti vongole for lunch tomorrow...

An almost-disaster! I was making spanish omelette, my standard when-Jason's-out dinner. Fried the onions and veg, boiled the potatoes, cracked open the eggs ... and whiffeeee! Just a slightly 'off' smell. So I swithered and dithered, sniffing and wondering... and then poured the eggs down the sink, tipped a tin of beans in with everything, chucked in some chilli sauce and it was actually all very tasty!

Last night, a Jamie Oliver spaghetti carbonara from the ipad app.  Pretty nice actually.  Quite a bit more expensive than a Waitrose carbonara TV dinner, a lot more work, but also rather nicer.

As usual the 9yo had to be made to eat it.  He doesn't like to eat anything he's not used to.   ::-)

I is in an hotel.
I had 'goats cheese tart' - it was miniscule and made me wonder if I'd done the right thing not ordering a side with my main, but it tasted ok.
Then I had pumpkin tortellini (there was lemon in there somewhere, allegedly) with black olives thru it. It wasn't as small as I feared, but it's a good job I'd had the started. Nice tho, and prolly more up my street than the Mongolian Restaurant (meat meat and more meat) that was tonights' entertainment after my meeting today. Plus I get to go to bed early and don't have to make small talk with strangers  :thumbsup:

I remember a report of some expedition in Mongolia (dinosaurs maybe) who got so fed up with the Mongolian non-vegetableness that they took over from their local cook and boiled themselves some spuds, at which the Mongolians said "How can you eat something which tastes of the dirt it comes from?" Which was kind of amusing in a way.

We are having beef stew wot has been in the freezer for a while. I have made some dumplings. I might have to have some more beer in  a moment.
