Programmable doorbell?

Is there such a thing? A very quick Google hasn't turned anything up.

What I was thinking I want (though I'm open to having my mind changed) is a wireless doorbell where I can have something downstairs that chimes, and ditto for upstairs. BUT, I would like the upstairs one to avoid chiming in the evening/night while my toddler is (likely to be) asleep. I guess I could get a timer socket, but are there other options?

You could use a socket powered wireless base unit upstairs with a pass through timer

Some sort of video doorbell?
Should let you set up different sorts of alerts etc. Could get a notification on your phone instead of the chime.

At night, put a Post-It on the doorbell that says "BOILING OIL RELEASE".

Just make sure that all your visitors are from Evri or DPD Local.  They never ring.  😡

Sorry.  Just utterly pissed off as I happened to be out front at the time that one of these scum says that they tried to deliver.  I now have to walk to my local collection point.

I don't mind the steps but the package is too bulky for a rucksack which makes it slightly awkward.

I think your original suggestion of a timer plug (I use TAPO ones) is the best.
