How do you have a shared folder auto mount in Ubuntu without fstab?

You mean a Ubuntu client connecting to a share on a remote machine? I don't think you can mount on startup without an fstab entry.

You can have bookmarks in Nautilus to remote drives, but this requires a click to mount. Go File -> Connect to Server and fill in the details according to the protocol (FTP, CIFS, SSH etc, no NFS).

I'm not sure if I've understood what your requirements are, but if you're running VirtualBox from Ubuntu, could you not have the shared folder on the host system, and have it show up as a network place in your guest OS? I have W7 set up this way in VirtualBox.
