7.5kg of potatoes

I got so fed up with the quality of the plastic wrapped potatoes in the supermarket here, I ordered some from a place that translates as "potatoe shop". To start with I got a pack of 3x2.5kg. With three different varieties to see what they are like.

The package should arrive tomorrow.

Does anyone have any interesting potatoes recipes beyond the obvious of roast, mash, chips, boiled, and bratkartoffeln?

Hasselback potatoes are one of those things that are possibly more effort than they’re worth, but still got to be tried.

Also just remembered this, which I came across while browsing Michel Roux's Pastry earlier today...



Basically, King Edward potatoes and onions sautéed in butter then baked in a pâte brisée case, then pour double cream in the top and let it soak into the potatoes. Looks fantastic. I'm very tempted to try it.

And since it's nearly Christmas, why not try the traditional Swedish festive dish, Jansson's temptation - a casserole of potatoes with pickled sprats!

Nice in a simple curry, with chickpeas and spinach or kale.

Rosti is quite nice, but probably more effort than its worth. Unless you have a food processor for grating them.

My final meal would be roast leg of lamb on boulangère potatoes. It's a classic combination for a reason.

Florida gets a bad rap, but I was once at a conference there, and amongst the usual posho-buffet of lobster tails and steaks, I spied a plateau of wonderment. Laid out ahead of me, an entire table dedicated to the mashed potato. Cheesy, creamy, chivy, bacony, every species of mash that the finest American potatologists could imagine. Never in the entire history of man has anyone ever eaten so much mashed potato. I was detectable from the dent I was making in the Earth's gravitational field by the end of it.

Make mash. There's no upper limit.

One of my favourite meals from childhood was 'chops on potatoes'. Why have I never learned to cook it? I wonder if it's too late to extricate the info from my mum now...

If you make Duchess potatoes you can freeze them and unfreeze individually. Same for hash browns, make a big batch and unfreeze a couple at a time.

Do you make your own bread? If so, substitute half the flour with the same weight mashed potato. Makes a very light loaf.

Tail End Charlie, that is the recipe for potato scones. Half mashed potato / half flour. Knead together, roll flat.
Then cook on a flat griddle plate.
