Good skills. I was gifted a young buck (15kg) from a local RTA a few weeks ago. I salvaged 7kg of decent venison.

Was there a lot of damage to it ?

That weight excludes the offal and stock bones. There was almost no meat on the rib cage. Young buck. Large enough but hadn't filled out. The kids are drying the hooves. The liver was badly ruptured and one rump was heavily bruised.

Lunch today was prawns sautéed in lime juice & coconut milk with root ginger, onion & garlic, served up with Thai rice and a finely-chopped mix of onion, green peppers, carrot, black mushroom, sugar peas & god knows what else. Excellent.
I've dusted all those old bottles and set them up straight.

Some home-made butternut squash soup into which, sadly, I have put
1) too much water and
2) not enough chilli.
As I make and freeze big batches of soups, I'll be consuming this for a while yet...

A couple of venison burgers that had been lurking in the back of my freezer compartment since the dawn of time,   and a 3 egg omelette with a dash of habanero sauce.

Ersatz carbonara, made with Tesco's smoked back bacon and mature cheddar rather than pancetta and parmesan.

Damn tasty though.

Had: perfectly-roasted duck accompanied by tagliatelle with broccoli alla Montalbano.  Would have been great with a good Cahors but had to make do with water.

Cook spaghetti and steam chopped spring greens over the top. Fry chorizo until the fat runs, then add garlic and chili to the pan to cook for a minute. Greens and pasta in the frying pan, squeeze of lemon juice and some zest, mix for a minute, serve with parmesan. Lovely.
