Palm Sugar

Does anyone know what is Palm Sugar and where I can get some from ?
My local supermarket doesn't seem to stock it !

Most of the big supermarkets seem to stock it in their larger stores.  Failing that you can get it from a oriental supermarket.

If it is jaggery you're wanting, then try your local Indian food stores - it's a reasonably common ingredient in several curries.

(It tastes gorgeous by the way - sticky and unrefined and rum-like. It makes wonderful banananana loaf) :thumbsup:

Jaggery, a common ingredient of Indian sweets. They're mostly jaggery plus ghee. So healthy!

Thank you  will endeavour to find it.

It's for a dish called 'Pil Pil Prawns' . Other ingredients are Red onions, Chilli flakes, 9 cloves of garlic !!!, Paprika, juice of 4 Limes and Prawns.

It was very nice, spicy if a little sour ( hence need to find Palm Sugar ).

You could probably substitute an unrefined darkish sugar from the supermarkt without anyone noticing the difference.

Heat 75ml olive oil, and add 2 red onions finely chopped, 1/4 teaspoon dried chilli flakes and 9 cloves of garlic finely chopped, and cook for 10 minutes to soften well.
Add 1 heaped tablespoon of smoked paprika and cook for a further 2-3 mins.
Next add 60g of palm sugar and juice of 4 limes, season well and turn down heat.
Reduce the total volume of the liquid and onions by roughly half.
Taste the sauce and adjust if you think you have to. It should have a nice balance of sweet and sour.
Add the approx 20 prawns and simmer for 3 -4 minutes in total.

I have found that our very own local Maple Syrup is an excellent substitute for palm sugar. However, that's not going to help you any more if you're in the UK...

You may also find it labelled gula melaka.
