It's a poor picture that looks Right Grim, but take it from me - Low-Carb pancakes, Blueberries and a lake of Cream was bloody YUMMY!

We broke with tradition yesterday and had these
banana & cinnamon american style pancakes
last night, with sliced bananas, maple syrup and squirty cream on top. There was enough batter left for a repeat this morning for breakfast.

I did some beetroot burgers tonight, turned out quite well thought I'd record what I did for a change.
About 700g ish beetroot - grate
1 onion - grate
handful each of coriander, parsley, spinach - chop fairly coarsly so the leaves crisp up or to taste
3 tsp cumin
a nutmeg - grated
2 eggs
gluten free flour to bind (I think it gives a better texture)
Mix
Deep fry.
Bonzer.
Served in this instance with Humous and pomegranate and salad.
Been working on this recipe since eating something like this in a restaurant, think I'm nearly there. Goes well in a bun with relishes if you want.

Conchiglie (should be orechiette, but I can't find any) with calabrese, anchovies, chilis and garlic.

No1Daughter bought us curry, for my mother's day treat. Followed by cake made by No2Son, ditto.
Now cannot move.

We had the Mother's day special from M$S. £20 for a nice piece of roasting beef, roast potatoes and assorted veg to steam in the microwave plus a sticky toffee pudding and a bottle of red. Good deal. . Mrs Pcolbeck did some yorkshires to go with it. The beef joint was huge (there are only three of us) so the cat has had a treat (the sitting on the arm of the sofa sniffing while we eat works) and I shall be having beef sandwiches and a beef evening meal tomorrow as well. Roasties weren’t as good as Mrs Pcolbeck own but not bad for a n easy shove it in the oven meal. The wine was very nice and we are all stuffed and teh pudding has been reserved for tomorrow. We aren’t big on bought meals but this wasn’t really bar the pudding and roasties and anyway after a day visiting mothers it was an easy treat.

For tonight we shall be having sole, purchased from a quayside vendor in Grandcamp-Maisy, some of which pile of said fish was still flapping. Done a la meuniere, I think.

Quick and easy one, sausage and ham tortellini with chili pesto and lots of gran padarno. Cupboard to plate in fifteen minutes, tasty, and not too much washing up.

Slow-roasted lamb ribs, mashed potato, lamb gravy, roasted squash and sweet potato, carrots, peas, green beans.

Oxtail soup - haven't got any energy left to do anything more complicated than open a tin, our contents into a bowl and zap with microwave.

A friend came over so we walked to the local kebab van, had a brief conversation with a shaking female heroin addict and saw a few doggers in the car park (it's for the local rugby club). The kebab was delicious though.

Spinach and potato soup with creme fraiche and freshly grated Parmesan.
Mozzarella avocado tomato salad with pumpkin seeds, artichoke hearts, pine kernels, spring onions, fresh basil, and paterno olives. Full.

Grilled sossidges that were drizzled with honey near the end of cooking, steamed carrot and celery fried with garlic and cumin then drizzled with orange juice, and a metric shedload of tabbouleh. Om nom nom...

A mushroom omelette, made with mixed frozen mushrooms and with some of that garlic and herb Boursin cream cheese added at the end.
Surprisingly tasty, as freezer-emptying meals go.
