I'm bored with cheese or coleslaw, but I know you weirdos will have some wacky fillings out there, so hit me with it.
Not literally though.

Sweat some Welsh leeks in Normandy beurre doux (add bacon lardons if that's yer thing). Bake potato by your preferred method as long as the skin gets crispy. Split spud, remove contents mash with more butter, the leek mixture, any optional grated cheese whatsoever, season well. Stuff back in and bake for another 10 minutes

Standard weekend lunch here is jacket potato with tinned fish (e.g. mackerel in some sauce or other)
Not very wacky, but not cheese or coleslaw

SmallestCub only likes cheese+beans+cheese. The double cheese is important.

I like houmous, cottage cheese, sweetcorn, leftover veggie chilli/curry/cauliflower cheese, puy lentils, tinned channa dhal, sauteed mushrooms.... and cheese, and coleslaw.

I agree with what has been suggested so far. Some things not yet suggested include: fried onion, crispy bacon, chopped sausages, mushy peas, chopped peppers (sweet or chilli), cheese sauce (hot), 1,000 island dressing (cold).

Current canteen lunch of choice is 1 x jacket, 1 x sweet potato jacket, butter, salad. Why waste effort on flavourings when you can just mix up the carbs?

Mr Smith has lots of butter & Marmite (& cheese). I have tinned salmon and mayo with capers.
