Anyone do it? I need an idiots' guide!
I'm going to use an old laptop for when we go away for checking e-mails. I have an Ericsson phone (K750i) with a USB data cable.

You are in luck, SE phones are pretty well supported under linux (they all use the same cable etc etc)
This guide is for the W810i but should do the job for your phone too:
